Wine Popsicles.

Think of it. Summertime. All the flavors that remind you of some of the best weather, the most fun holidays and all those afternoons with friends and family relaxing in the backyard.

Aside from Ice Cream, Popsicles are the quintessential summer treat.

Bomb pops, fudge pops, pop ups, the ever popular sno-cone and you cannot forget the frozen treats shaped like Sonic the Hedgehog or your favorite Ninja Turtle (complete, of course, with gumball eyes.)

Popsicles are one of our favorite treats, and believe it or not, so easy to make in the comfort of your kitchen. We always tell you to push the flavor profile. Some favorites we’ve made over the years include bananas foster popsicles, watermelon kiwi, cucumber chili and our favorite, creme brulee (there might be some Baileys in that recipe…)

One of the easiest ingredients to incorporate into your Popsicle recipe is wine. Does a Sangria Popsicle get your wheels turning?

While the kids snack on ice cream sandwiches try some of the recipes below to please both the adult and kid in you.


Pink Champagne Popsicles

Ingredients 

  • 1/3 cup water
  • 1/3 cup sugar
  • 2 cups of grapefruit juice (I used ruby red)
  • 2 cups of Ruffino Prosecco

Instructions

Bring water and sugar to boil, then remove from heat. Stir in fresh squeezed grapefruit juice (or pick up a bottle of grapefruit juice from the store) and then add the Ruffino Prosecco. Stir and pour into popsicle molds.

Let freeze for 1 hour. Then, remove from freezer, add popsicle sticks and put them back into the freezer until fully frozen. You add the popsicle sticks after they had a little time to set up to keep the sticks straight up and down. If you put them in right away, they’ll most likely float to one side or freeze crooked.

Peach Wine Popsicles

Ingredients

  • 3 fresh peaches
  • 1 cup Tisdale Pinot Grigio
  • 3 Tbsp peach schnapps
  • 1-2 Tbsp sweetener of choice

Instructions

Pit and roughly slice 2 peaches and place in blender with Pinot Grigio, peach schnapps, and sweetener. Blend until smooth; about 30 seconds – 1 minute.

Pit and thinly slice remaining peach.

Pour puree mixture into popsicle molds, filling each about 1/2 way full. Place 1-2 peach slices into each mold and top with any remaining puree mixture. Cover and insert popsicle sticks.

Freeze until fully set, about 4-6 hours.

Red Wine Chocolate Dipped Popsicles

Ingredients

  • 16 ounces strawberries washed and hulled
  • 1/2 cup simple syrup (1/2 cup sugar plus 1/2 cup water heated over medium heat until sugar dissolves)
  • 1 cup 14 Hands Kentucky Derby Red Blend
  • 2 tablespoons balsamic vinegar
  • 6 ounces good quality dark chocolate melted
  • 1/2 teaspoon coconut oil melted

Instructions

Add all of the ingredients except the dark chocolate and coconut oil to a blender or food processor and puree until they are smooth.

Pour the mixture into popsicle molds and insert a popsicle stick.

Freeze for at least 4-6 hours or overnight.

In a microwave safe bowl, microwave the dark chocolate in 20 second intervals stirring each time until the chocolate is just melted, be careful not to burn it.

Stir the melted coconut oil into the melted chocolate.

Line a baking sheet with parchment or wax paper.

Remove the popsicles from the mold and dunk them in the melted chocolate.

Lay them on the parchment lined baking sheet.

Work quickly to avoid having them melt, then immediately place them back in the freezer to harden.

Store the finished popsicles in a single layer in a freezer bag or airtight container in the freezer.
