House Pour.

The continuous renaissance of American dining has shifted with the decades, generations and trends. Desired tastes resulting from the nouveau and the celebrity of food and flavor have not only pushed the envelope of cooking but also of finding a way to complement that experience. Back to the 1960s wine lists even at the swankiest places often featured a house pour: a simple red and white, inexpensive and, most of the time, enjoyable.

Today, as the millennial generation continues to seek out experience whilst being more liberal with their wallet, many casual chain restaurants offer 20 or more wines by the glass, making a house pour wine almost extinct.  We make a case, however, to practice this technique at home. There is an advantage to always have a wine on hand that you not only love but love to share; something you can pour at a moment’s notice, for friends, family or heck, even strangers.


Spring is the perfect time to adopt this practice when the excitement of backyard BBQs and family reunions lay on the horizon. Find a wine that resonates with you, that you can experience; steer toward what’s affordable, so you will not think twice about opening another bottle. Choose a wine you can talk to, something that overlaps with a fond memory of a time or place. My fiancée and I love to travel, to experience food and wine not only that is local to the region but comes from a decision made in the moment. Choosing a wine can be overwhelming, however, connecting and sharing one from experience will make it that much more special for your guests. We share a love of a certain vineyard in Oregon and each time I pour one of their wines, we get the added bonus of a rush of happy memories.
